Pumpkin Soup Recipe: Easy & Simple

Ingredients
1 butternut pumpkin (peeled and cut into 2cm cubes)
1 red onion (peeled and quartered)
2 carrots (sliced)
1.5L of vegetable stock
1 tbsp minced garlic
1 tbsp of ginger powder
1 tbsp of turmeric powder
Method
Throw diced vegetables into a pot and then pour vegetable stock over top. Add garlic, ginger and turmeric. Bring to a boil.
When boiling, reduce to a simmer. Simmer for 20 minutes or until pumpkin and carrots are soft enough to be pierced with a fork.
Once vegetables are done, use a stick blender to blend it all together.
