Pumpkin Soup Recipe: Easy & Simple

This is one for the family recipe books. You will look forward to having it every winter and it is so easy to make. It is packed full of healthy ingredients like turmeric and ginger. Plus there are multiple ways to dress it up to tailor it to your taste. You can make it spicy, salty, sweet or Thai fusion. Even better, it’s vegan friendly!

Ingredients

1 butternut pumpkin (peeled and cut into 2cm cubes)

1 red onion (peeled and quartered)

2 carrots (sliced)

1.5L of vegetable stock

1 tbsp minced garlic

1 tbsp of ginger powder

1 tbsp of turmeric powder


Method

  1. Throw diced vegetables into a pot and then pour vegetable stock over top. Add garlic, ginger and turmeric. Bring to a boil.

  2. When boiling, reduce to a simmer. Simmer for 20 minutes or until pumpkin and carrots are soft enough to be pierced with a fork.

  3. Once vegetables are done, use a stick blender to blend it all together.


How Can I Make Pumpkin Soup Taste Better?

There are a few things that you can do to make a delicious pumpkin soup:

  • Add red curry paste for some added spice and zest. It is a mouth-watering combo!

  • Add coconut cream for a creamier soup

  • Add a plant based chicken stock powder for a saltier and more flavourful soup

  • Roast the vegetables before hand with herbs and spices to make it a flavour bomb

Thicken by mixing 2 tablespoons of cornstarch and pumpkin soup together and then add combined paste back into the soup.


Should I Roast Vegetables For My Pumpkin Soup?

Roasting vegetables before turning it into a soup adds extra flavour. Try roasting the vegetables with herbs and spices like paprika, Italian herbs and salt and pepper.
