Earl Grey & Edible Flower Shortbread Cookie Recipe
Let’s make some beautiful and simple shortbread cookies! My names Gina (Marketer for Dynasty of Tea & Daughter in-law to our Tea Master and owner Donna). I have a love for shortbread cookies and tea so I have put together a simple recipe that combines the two! I mean, who doesn’t love a sneaky biscuit with their tea? We are sprucing up the recipe by adding Earl Grey tea leaves (known for its delicious bergamot flavour) and edible pressed flowers to finish the final look. Whip these up on the weekend, for a high tea party or just because! The perfect shortbread recipe to pair with your next cuppa!
Ingredients
340g unsalted butter
4 cups all-purpose flour
2 tps vanilla extract
3 egg yolks
300g granulated sugar
2 tsp salt
1 packet mixed edible flowers
2 tps earl grey tea leaves
zest 1 orange
Directions
In a large bowl combine your butter, granulated sugar and salt until completely mixed.
Add egg yolks and vanilla extract until all is combined thoroughly.
Sprinkle in your earl grey tea leaves and orange zest until they are evenly placed throughout the mixture.
Mix in your all-purpose flour and combined ingredients until it starts to form a dough like consistency. Knead dough for 5 minutes until your able to roll into a smooth ball.
Place dough on a large sheet of baking paper and roll out to an even thickness. Once this is done, stencil out your cookies with a round mould of your choosing. Be careful not to completely cut through the dough yet.
Add your edible flowers within the round moulds. Place the flowers as you wish, being careful not to over crowd the area.
Once the flowers have been placed, put a sheet of baking paper over the dough and carefully use a rolling pin to press the flowers into the dough.
Next, cut the cookies out completely and add to a tray lined with a sheet of baking paper.
Preheat oven to 180c and bake cookies for 15 minutes or until golden brown. Remove from oven and let cool.
WHY DID I USE EARL GREY FOR THIS RECIPE?
Earl Grey, as previously mentioned, has an elegant bergamot flavour. Our Earl Grey is highly aromatic and has a solid bergamot presence, giving the recipe another dimension of flavour. This is a great addition to a simple and plain shortbread recipe. With the added orange peel zest, it also adds a subtle sweet and citrusy flavour to this recipe.
